This dish starts with beef tenderloin that’s dry rubbed with an organic nine herb & spice blend, air-dried, oven-roasted and sliced.   We craft a blend of Yukon Gold potatoes, parsnips and cauliflower puree to create a 50% vegetable “smashed potato”.  Sautéed Portabella mushrooms and roasted baby carrots are served alongside a savory caramelized shallot and red wine reduction, and a blue cheese crumbles side cup gives you an optional topping.
