Cuban Shredded Pork, Sweet Plantains and Lemon-Cilantro Mojo

For our very first Cuban dish we went all out! The dish starts with local hormone & antibiotic-free boneless pork shoulder (Carne Locale) that’s slowly braised in organic citrus juices, shredded by hand, tossed in a roasted garlic mash and lightly rubbed with fresh mint, oregano, organic cumin and black pepper. We serve it with roasted sweet plantains, broccoli, sweet potatoes, yuca and a cup of our own “clean” refreshing lemon-cilantro mojo. Dinner. Is. Done.
