Our goal with this dish is to deliver all the flavor and texture you’d expect in a risotto without making it a “gut-bomb”. The creamy risotto is crafted with brown rice, caramelized onions, white wine, organic herbs & spices, lemon zest and light cream (far less cream than a traditional risotto). Green peas are folded into the finished risotto for texture, and it’s topped with sauteed lemon shrimp, zucchini, summer squash and baby spinach.
