Our very first Vietnamese creation: Vietnamese Banh Mi minus the sandwich. This vegan platter features all the classic Bahn Mi flavors prepared with an attention to tradition. Our “meat” balls are prepared using a roasted sweet potato and garbanzo base, seasoned and injected with ground flax seed, Tamari soy sauce, onion, garlic, sesame oil and a touch of apple cider vinegar. The “meat” balls are roasted and served over a bed of blended quinoa (white, black & red). Carrot, Daikon radish, cabbage and herbs are tossed in a light lemon oil and served with a side of chopped roasted peanuts. Our local Sriracha (Kitchen Garden Farms, Sunderland, MA) is whipped alongside aquafaba (garbanzo brine) to create a creamy and spicy Siracha Crema.
