This dish has been a work in progress for us, but we finally have it dialed in. We can now say that it’s a very special sauce. The base is a blend of onion, carrot, celery, and antibiotic and hormone-free local ground beef from Maine Family Farms. We simmer for 2 hours and serve over a bed of local whole wheat pasta from Capone Foods (Somerville, MA), roasted cherry tomatoes, bell peppers and cremini mushroom and top with parmesan. A classic bolognese, just with more veggies!
